Jamilla prepares her dough for “Roti”, then rolls her dough with such a technique I have never seen before.  She begins by rolling the dough in her hand and forming a conical shape and poking the top down into the middle then flattening the dough in the palm of her hand.  She puts a slight dusting of flour on both sides. 

Then with a rolling pin slowly rolls out her dough, ‘and get this’ the dough is slowly turning by itself.  Jamilla did not roll, stop and turn the dough.  After this, she turns the dough over and rolls, turns, rolls.  Each dough ball was round and the same size. 

I tried!. There was no way I could imitate her method.  As for rolling the dough, Jamilla said I was using too much flour and my dough was kind of square and kept sticking to the board. 
I give up!" I complained. 
 “Don’t give up Missy, you will get it”. She smilingly assured me. 

Watching Jamilla cook the dough in a very hot pan I was fascinated in how the dough puffed up and my mouth started to salivate.I excitedly mentioned that I was looking forward to lunch because at the same time potato curry was getting cooked on the other side.

  1. Hi whaea Suzanne and adult learners, I enjoyed how Jamilla encouraged you to keep on going . Last year in B6 we had roti with fish curry. Can you add different spices/flavours into your roti?

    1. Thanks for your response. Roti is amazing.. Yes you can add any flavours you like. Chicken, Tuna, Vegetables, Meatballs, even sweet ingredients might work.
