Cooking with Rice
Our first cooking session last week. (March 2018)
We had two new adults joining our cooking group.  We look forward to what they can share with our group.   What a range of cultures we have in this lovely little group.  
Our theme for this week was rice.  Rice is a staple that we find in most pantries. It is both filling and inexpensive to buy.  Which makes it ideal for small and larger households.  
We used the absorption method to cook the rice.  This is so that the grains of rice were not broken up and would be nice in a salad.  There are many videos on Youtube if you are interested in using this method of cooking.  
The recipes that we tried were brown rice balls and pineapple rice salad.
The brown rice balls would be great for lunch boxes and as an entree or snack.   We tried adapting the recipe by adding some curry powder into half the mixture also. The other change we made was substituting Tahini, which is a sesame paste with peanut butter.    
The pineapple salad has some lovely crunch and the dressing finished it off beautifully.  Due to cost, we substituted cashew nuts with peanuts.  This still gave a nice crunch to the salad.   I would suggest adding the nuts and dressing to the salad just before serving so that the peanuts retain their crunch.  
This week one of our lovely ladies is going to teach us to make Roti.
