Panakeke




Panakeke is a Tongan Doughnut. 
This recipe can be reduced or doubled depending on how many panakeke you need to make.

8 cups self-raising flour
1/4 tsp. yeast
1 cup sugar ( to your taste)
6 cups warm water
Mashed banana or coconut (optional)

Combine mixture to a sticky dough. Leave in a warm place to rise. If you use both self-raising flour and yeast you only need to rest the dough for 30 minutes.  If you use plain flour and yeast the rest time will be 2 hours. 
Heat oil in a pot.Drop spoonful ( or with hand and cook until golden brown.
