Potato and Tuna Samosas
Our lovely Whaea Jamilla taught us to make this amazingly, delicious potato and tuna recipe.
1/2 tsp Salt
3 Tbsp Oil
Water
Combine and add Water little by little to make a stiff dough. Knead for a while and then let it rest for 15 - 20 minutes.
Filling
4 potatoes boiled.
1 small tin of Tuna
1 small onion
2-3 cloves of garlic
1-2 tsp turmeric
1-2 tsp masala
1/4 tsp each fenugreek Seeds /mustard seeds/cumin seeds
1/2 cup mixed vegetables
salt and pepper to taste
chilli optional
oil for deep frying
In a large pot saute the seeds, onion and garlic for about 2 minutes. Add the turmeric, masala, salt and pepper. Then add crushed, cooked potatoes and drained tuna.
Roll the dough into thin circles. Cut the dough into quarters and put a spoonful of mix into the dough and fold. Watch the video below, to see the folding technique. Form a cone and then put the filling into the cone and seal with a water and flour paste. Deep fry the samosas on a low medium heat.
