Vietnamese Fried Rice 
We are very lucky to have a Vietnamese lady in our adult learners class.    This week we made Vietnamese Fried Rice and Nga was our expert tutor.  Thank you, Nga I look forward to trying this for myself at home.  
Ingredients
4 eggs 
2 tbsp Olive oil, for frying 
2 cups of cooked cold long grain rice.  (rice needs to be dry, not sticky)
1 tsp fried garlic
1/4 tsp of ginger paste
3 tsp light soy sauce or fish sauce
2 tsp of chicken powder (Thai Knorr Chicken Powder - Brand that was used)
1 small onion
3/4 cup mixed vegetables 
chopped spring onion coriander - for garnishing
Prepare the rice the day before so that it is cold when you need to use it for this recipe.  First, prepare the egg. Put 1/2 tsp of water and 1/2 tsp chicken powder into a bowl with the eggs, whisk. Cook like an omelette. Cut this into little pieces and put aside.
In a large fry pan fry the onions and ginger, add the mixed vegetables and continue to saute for a couple of minutes.  Add the cold cooked rice to the pan and continue to fry.  Then add the fried garlic, chicken powder, soy sauce, spring onions and the chopped fried egg that was cooked earlier to the pan.   Cook until combined. Finally, Garnish with the chopped coriander leaves. 
For this recipe we used Tuna, but any meat can be included or excluded.
