LUnch Box Ideas
For this cooking session, we looked at different ways to make lunch ideas that are fairly cheap and easy to produce.  This session was a huge success and lots of fun.  
Below is a basic scone recipe that we used for making some of our lunch box ideas.

BASIC SCONE RECIPE
INGREDIENTS
3 cups Edmonds standard flour
6 tsp Edmonds baking powder             
¼ tsp salt                                            
extra milk
75g butter
1 to 1½ cups milk, approximately
METHOD
- Preheat the oven to 220ºC. Grease or flour a baking tray.
- Sift the flour, baking powder and salt into a bowl. Rub in the butter with your fingertips until the mixture resembles fine breadcrumbs.
- Add the milk and quickly mix with a round-bladed table knife to a soft dough.
SMOKED FISH FILLING
1x tub of cream cheese
1x tin of smoked fish
1x spring onion, finely chopped
salt and pepper to taste
PINWHEEL
Roll out the scone dough into a rectangle of about 1.5 cm thickness.   Spread the above-smoked fish spread onto the top.   On top of this, we placed baby spinach. Then we rolled it up into a spiral and cut slices.  These circular shapes were placed on a lined baking tray ready for cooking.  They will spread so make sure to spread them out on the tray.  
MINI PIZZA
Again roll out the scone dough and using a cutter or glass cut round mini circle for the pizza base.  Place on a lined baking tray.  Cover with whatever topping is appealing to your children.  Cook for about 10 minutes or until golden brown.  
Topping ideas.
- chicken and cheese
- tinned spaghetti, mushroom and cheese.
- smoked fish spread with chopped capsicum and spring onion
- peanut butter and banana
- tomato sauce, bacon and cheese
- hummus and chicken.
- tomato sauce and salami
There are many ideas that can be used. These can also be cooked ahead of time and frozen until they are required for the lunch box.  They will defrost in the lunch box and be ready by the time it is ready to eat them. 
SAUSAGE ROLLS  
Roll and cut the dough into rectangles. Spread tomato sauce over the dough and place half a pre-cooked sausage on top of the sauce. This is then wrapped and sealed. I suggest brushing it with egg wash or milk before cooking.
Play around with the filling. Try cooked chicken, potato curry. You could add vegetables, your choice of sauce, get creative.
NUTS AND BOLTS
Nuts and Bolts are another snack option for lunch boxes. You can adapt the recipe as per your taste. Cook up a batch and portion up for lunches.
