Pineapple Moon Pie

We have cooked a pineapple pie before.  This time a recipe was found that used pastry instead of a cake type base.   These pies could be made and put in the freezer and pulled out as needed.  They are also handy if you are travelling and wanting something sweet.  I recommend eating these with cream, custard or ice cream. 

We adapted the recipe slightly by adding different ingredients to the filling.  We divided the pineapple filling into three bowls.  The first we left plain. For the next filling, we added freshly chopped mint.  This gave the pie a fresh summery taste.  For the third bowl, I used a passion fruit paste that I had found.  I dont think the paste did this recipe justice, perhaps try fresh passion fruit pulp or passion fruit pulp that can be found at most supermarkets.  You will get a better flavour profile.
