Vegetarian Rainbow Pad Thai

I have often wanted to cook ‘Pad Thai’.  Any time that I go to a Thai restaurant you can be sure that it one of the things that I will order.  
I recently found this recipe online and although not quite authentic I really liked the idea of this being a dish that incorporated more vegetables and still had lots of flavours.   
The change that we made to this recipe, was that we didn’t include the red capsicum.   This was purely for cost, as at this current time they are not quite in season and so the price is still quite high.  To bulk the recipe out, finely sliced cabbage could be used.
