Corn Fritters
Corn Fritters have been a recipe in most kiwi (New Zealander) households for many many years. It can be as simple as you need it to be or as complex as you dream.
In our first cooking session for the year we made these corn fritters, however, I added a twist. We needed to be innovative. How can we adapt this recipe to make it lighter and tastier? If dear reader you try any of these recipes we would love to hear or see your results too.

Basic Recipe - Thanks Missy
1 x Can Creamed Corn
1/2 cup of Self Raising Flour
Salt and pepper
Oil for frying
Combine in a bowl. Dollop 1 to 2 tablespoons of batter into the oil. Fry on medium heat.
Recipe 3
1 x Can of Corn - Creamed if you prefer.
2 eggs, beaten
1 tsp baking powder
2 Spring onions - chopped finely
1 capsicum - chopped finely
1/2 cup flour plus extra if needed
Oil for Frying
Combine all the ingredients together and mix well. Place about 1/4 cup of mixture into the hot oil and fry until golden.
Recipe 4
1 x can of creamed corn
1 x spring onion - chopped finely
1/2 bunch coriander - to taste
165 ml of coconut cream
2 x cups flour
salt and pepper to taste
2 tsp baking powder
2 x eggs
2 x chilli's - chopped finely
1 x capsicum - chopped finely
1 x cup of cottage cheese
3 Tbsp oil
Place the vegetables and the dry ingredients together in bowl. Mix the wet ingredients and combine with the dry ingredients. Mix well. Place about 1/4 cup of mixture into the hot oil and fry until golden.
All the corn fritters were delicious. However, we especially enjoyed this recipe with the coconut cream and coriander.
