Spicy Pear Chutney
This recipe was found on YouTube and I had to translate it.
Here is the link to give credit to the original chef.
Spicy Pear Chutney
700g Pears
¼ tsp. Salt
½ tsp. Ground coriander
½ tsp. Chilli powder (optional)
¼ tsp. Ground cinnamon
½ tsp. Chaat Masala (or Garam Masala as a replacement)
2 cinnamon sticks
1 x Star anise
2 pinches Black pepper
½ tsp. Ground fennel seeds
½ Cup Sugar
1 Tbsp. Fresh Ginger
2 Tbsp. Oil for frying spices
Method
1. Heat oil in a pan and add part of the cinnamon stick and star anise fry until fragrant.
2. Add the peeled, chopped and deseeded pears and cook covered for about two minutes on medium-high heat.
3. Add the salt and sugar to the pears and stir. Cover and cook for a further two minutes.
4. Next, add all the pre-measured spices into pear mix.
5. Cover and cook the pears until they are soft and tender.
6. When they are tender use a potato masher to mash the pears.
Don’t over mash, as it is nice to have small chunks of pear throughout the chutney.
7. Spoon mix into sterilised jars.
