We made mince and cheese pies this week. What a delicious recipe! Some of us played with the filling and added spices to the mince and others just stayed true to the recipe. I suggest that you watch the video for how "Keef Cooks" prepares his recipe. There are some preparation and cooking elements that are not included in the written version of the recipe. The recipe link is located under his video.
The pastry requires lard, however, we were unable to locate this at our supermarkets so we used dripping instead. If you want to make this pastry into a vegetarian version then the suggestion is to replace dripping with 'Chefade' or 'Kremalta'. Crisco Vegetable shortening is another option however, this is not as easy to obtain in New Zealand.
